Hey everybody!

Hoping you all had a great weekend. I did! Any opportunity to  bake makes a great weekend for me.

My sister sent me this bigGAS box with all types of cake pans. She’s getting ready to move and wanted to get rid of some stuff. YAY me!! When the box came in on Saturday, I opened it up and thought it would only be the spring-form pans we talked about. Nope, it included all kinds of pans. As you can see, I wasn’t sure what to think about the 4 boobed pan. I’m sure if my sister and I were together when I opened the box I’d probably laugh so hard I’d wet my pants! We’re like that. We laugh at the corniest jokes. That’s what we do.

I saw this baby bundt pan and couldn’t wait to play around with different recipes. Betty Crocker had a recipe this month for a Lemon Cream Cheese Bundt cake. Mmmmm!

These were yummy! I was scared they were going to stick to the pan but they didn’t! Whew!!

The recipe was easy. I usually have everything for a cake on hand. Most of the time I have stuff for a cake but don’t have anything for dinner (Woopsie!)

My Swirly Pan Adventure

Greetings all! I had the opportunity of using the Traveling Swirly Pan recently. Thanks to all who made this happen!!!

Buttermilk Lime Cake

This one is a Buttermilk Lime Pound Cake. Recipe found on The next one is my favorite. My version of a Sock It To Me Cake. I call this one my “Swirl It To Me” Cake … hehe … I LOVE cinnamon swirly things anyway so I really enjoyed this cake. Instead of using the sour cream, I used Yoplait Greek 100 Apple Pie yogurt. Mmmmm – it made the cake really moist. I don’t normally have sour cream on hand.


Make sure you grease the pan REALLY, REALLY good!!

Wow! This cake was so good. I’m crazy about pound cakes, so this one will definitely be made again. I just happened to have some apples on hand along with the other ingredients. It seems like I always have enough stuff for a cake but when it comes to fixing dinner, I don’t! OOPS! (Gotta work on that!)

2 Cups sugar
1 1/2 Cups vegetable oil
2 teaspoons vanilla
3 eggs
3 Cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
2 Medium apples, peeled and chopped
1 Cup chopped walnuts

Caramel Glaze
1/2 Cup butter
1/2 Cup brown sugar
2 teaspoons milk

Heat oven to 350 F. Grease and flour a 12inch tube pan.
In large bowl beat oil, sugar, eggs with electric mixer on medium speed until light and fluffy. Beat in flour, salt and baking soda until smooth. Stir in apples and…

Easy Potato Casserole

Need a quick side dish? Cheesy potatoes are always a hit!!


Easy Potato Casserole

I love potatoes, but on a weeknight after a long day at work I do not want to peel them. This easy recipe takes canned sliced potatoes to a new level. Cans are a good thing. Don’t knock’em!

2 -15oz cans sliced white potatoes

¼ c chopped onions

1 TBSP butter

1 c shredded sharp cheddar cheese

¼ c Parmesan cheese

½ c Sour Cream

Season salt

Garlic Powder

In a large skillet, saute butter and onions until tender. Drain potatoes and add to pan with onions.  Continue cooking for 5-8 minutes or until the potatoes are tender. Season with seasoned salt and garlic powder to taste.

Transfer potatoes to large mixing bowl and add the cheeses and sour cream.  Gently combine and place in 8 x 8 baking dish that has been sprayed with cooking spray.  Sprinkle additional cheese on top if desired and bake at 350 degrees for…

Meet Wriggley, The Rescue Cat!

Here he is!


We went to a local shelter to adopt a cat in September. The cat we thought we were going to bring home was “Tank”.  We walked all over the shelter trying to get “Tank” to bond with us … but it didn’t happen. Then came “Wriggley”.

Wriggley had been at the shelter for about 2 years. I had never had an orange cat before. Not that it mattered, but I had my eye on a different cat. We saw so many cute kitties, but the one we liked just didn’t “jive” with us at all. Wriggley kept following us around the shelter and appeared to be very playful. He would even “talk” to us every so often. I looked down at him and asked if he wanted to come with us and he let out a big “Meowww” like he really meant it.


Wriggley adjusted well to his surroundings when we brought him home. Here he sits on my leg as I’m trying to exercise! He always wants to play. He chases his squishy ball down the hall and he even fetches! He’s very loving. I’m so glad Wriggley picked us!! He makes sure I don’t sleep late. He never gives me an attitude. He has unconditional love for us. If anyone got rescued, it was me. Thank you Wriggley for getting me out of this funk I was in! Please support your local animal shelters! Adopt, don’t shop!!
