Easy Potato Casserole

I love potatoes, but on a weeknight after a long day at work I do not want to peel them. This easy recipe takes canned sliced potatoes to a new level. Cans are a good thing. Don’t knock’em!

2 -15oz cans sliced white potatoes

¼ c chopped onions

1 TBSP butter

1 c shredded sharp cheddar cheese

¼ c Parmesan cheese

½ c Sour Cream

Season salt

Garlic Powder

In a large skillet, saute butter and onions until tender. Drain potatoes and add to pan with onions.  Continue cooking for 5-8 minutes or until the potatoes are tender. Season with seasoned salt and garlic powder to taste.

Transfer potatoes to large mixing bowl and add the cheeses and sour cream.  Gently combine and place in 8 x 8 baking dish that has been sprayed with cooking spray.  Sprinkle additional cheese on top if desired and bake at 350 degrees for…

Meet Wriggley, The Rescue Cat!

Here he is!

IMG_20140912_162230

We went to a local shelter to adopt a cat in September. The cat we thought we were going to bring home was “Tank”.  We walked all over the shelter trying to get “Tank” to bond with us … but it didn’t happen. Then came “Wriggley”.

Wriggley had been at the shelter for about 2 years. I had never had an orange cat before. Not that it mattered, but I had my eye on a different cat. We saw so many cute kitties, but the one we liked just didn’t “jive” with us at all. Wriggley kept following us around the shelter and appeared to be very playful. He would even “talk” to us every so often. I looked down at him and asked if he wanted to come with us and he let out a big “Meowww” like he really meant it.

Wriggley adjusted well to his surroundings when we brought him home. Here he sits on my leg as I’m trying to exercise! He always wants to play. He chases his squishy ball down the hall and he even fetches! He’s very loving. I’m so glad Wriggley picked us!! He makes sure I don’t sleep late. He never gives me an attitude. He has unconditional love for us. If anyone got rescued, it was me. Thank you Wriggley for getting me out of this funk I was in! Please support your local animal shelters! Adopt, don’t shop!!

What’s The Point?

Are you going through a tough time? Read what my friend Darian writes …

Inspirational Vitamins

Anytime God comes into your life and extends the courtesy of a new season or unveils a new gift, it’s because there’s something in your future that’s much brighter than the days of your past.

After the passing of my mother, I couldn’t help but wonder: “What’s the point?” No matter what anyone said to me, I couldn’t see life beyond where I was at that moment. How could I move forward without the person I thought I was responsible for? Why did God promise me all of these things if my mother wasn’t going to be around to see it? What was the point? One morning, God said to me: “You have wasted as much time as you are ever going to waste. You no longer need to waste time worrying about stuff that you don’t have the power to change. You will no longer waste time trying to…

Picking the Perfect Pie

This is the perfect size! Everyone LOVES apple pie and who doesn’t love caramel? YUM! This will be on my “to do” list this weekend!

Whisk Away Your Worries

This past weekend was one of the best I’ve had in a very long time. I went apple picking with amazing college women and middle school girls, my best friends from home came to visit Cville, my parents also came to town, I was finally able to tailgate and watch a home football game again (after 3 weeks), I ate delicious food, and I was back in the kitchen baking. Talk about the epitome of a perfect fall weekend.

I am a part of an amazing program called YWLP – the Young Women Leaders Program. I was a Big Sister to a 7th grade girl last year. This year, I am a facilitator to 7 Big and Little pairs. Pictured below is my wonderful co-facilitator – she makes the whole experience even better!

Instead of our normal group meeting this week, we spiced things up a bit. We went apple…
